This dish made me think of Masterchef for some reason – you know when they’re talking about the contestants and they say “that guy really knows how to get flavour into his food”? I always remember them saying that and kinda thinking – what does that actually mean?? But that’s basically all that happens in Masterchef, a bit of cooking and lots of nonsense comments and Gregg making those “oooooer” noises while scarfing a dessert…

In any case that is what I’ve tried to do with this chilli recipe – get lots of flavour into it. Because if I’m honest, I often find vegetarian chilli a bit bland and disappointing. But I had a really nice one the other day and it inspired me to try again and see if I could create a chilli I can be a bit more excited about. This is that chilli and it is pretty damn tasty…

No butternut squash risotto allowed! Sorry, I don’t hate risotto but am I the only one who’s noticed that this is the ‘go to’ dish for any chef who needs a vegetarian option for their menu?? I don’t mind if I only get one option at a restaurant or pub but I’d love it if that option was just a little bit more creative please. Anyway! Broccoli has always been one of my favourite veggies. Before I got my vegetables via a box scheme delivery service (like an American CSA), I would buy it religiously every week. And then I didn’t eat any for ages – I guess I got a bit distracted by all the other vegetables I was discovering and I just forgot about good ole broccoli. But these are the recipes that remind me why I will always go back to where my love for vegetables began…

The best dishes seem to come from the dregs of my refrigerator. Somehow a full fridge just isn’t as inspiring as a mishmash of random items that you have to cobble into a meal. This was one of those nights. A few potatoes, half a can of sweetcorn and a pepper was all I had to work with when I got home. It was 9 o’clock and I’d just walked back through the wind and the rain from my first attempt at getting back into shape after a very lazy Christmas, ugh. But none of it mattered once I ate this…

I haven’t done much gluten-free cooking before so when a coeliac friend invited us round and asked us to bring a dish, I thought it was a good excuse to try something new. And then I got a bit over-enthusiastic as usual so ended up making three things to bring! Oy vey. I blame it on having too much time on my hands over the holidays, it’s so cold and grim out there, I just end up sitting round the house and coming up with more things to cook! Oh well, it all seems to get eaten somehow…
